Getting ready for Halloween!

Kid-Friendly Recipe: Pumpkin Bread

Hi! Cori of Peace, Baby! Batiks here. As soon as fall hits, I am ready to bake. My tastes tend toward cookies (whose doesn’t?!?) and sweet breads. This pumpkin bread is one of my favorites. I’m going to bake another batch before Thanksgiving.

I always buy at least one baking pumpkin each fall. And, like I said in my butternut squash soup post recently, I rarely peel raw winter squashes. Rather, I bake them. Cut the pumpkin in half, scoop out the seeds and bake for 30-60 (or more) minutes at 350 degrees. Let the pumpkin cool long enough, and you should be able to lift the shell off the pulp. If not, it’s really easy to scoop it out with a spoon. I freeze it in 1 cup portions so it’s ready for recipes.

If that’s not your cup of tea, plain canned pumpkin also works in this recipe. I think this recipe is nearly perfect; the next time I make it, though, I might add chocolate chips because in my opinion, everything is better with chocolate! It makes two loaves. They freeze great, or if your friends are like mine, they wouldn’t mind if you shared a loaf with them.

Want to get your kids involved? Give them a wooden spoon and a baggie of walnuts and set them to chopping! Mine had a great time “bamming” the nuts.


Pumpkin Bread
(Source: A Taste of the North Country by Wendy Harrington)
Yield: Two loaves

2c mashed pumpkin
3 1/2c flour
2t baking soda
1/2t salt
1t cinnamon
1t nutmeg
3c sugar
1c vegetable oil
4 eggs
2/3c water
1c chopped walnuts

Preheat the oven to 350 degrees and lightly grease two 9x5-inch loaf pans.

Mix the dry ingredients together in a large mixing bowl. Add the pumpkin, oil, eggs, and water, mixing until well blended. Fold in nuts (and/or chocolate chips!), and divide the batter evenly between the two pans.

Bake for 1 hour, until the bread tests clean. Cool in pans for 10 minutes; then let cool completely on wire racks.

Fall Recipe: Butternut Squash Soup

I’ve been waiting for fall since at least July, so when I found butternut squash in our farm share bag last week, I knew we were almost there. I planned one of my favorite soups for the first day of fall.

I’ll tell you right now – I don’t peel and chop winter squashes anymore. I have zero interest in fighting with the tough skins, and I’ve cut myself with the knife more than once. Instead, I bake them. Slice the squash in half, scoop out the seeds, and bake skin up on a greased cookie sheet at 350 degrees. This can take 30-60 minutes (or more) depending on the type and size of the squash. But, it is way less frustrating than peeling it. It just means you need to plan ahead a little.



Let the squash cool, and from there you can easily scoop the squash out of its shell with a spoon. On thicker-shelled squash, you can sometimes just lift the shell off of the squash. I did that once with a pumpkin, and it was so cool.

Taking care of the squash is the hardest part of this butternut squash soup recipe, which I got from the side of a Silk carton a couple of years ago. It’s ridiculously easy and just about the only soup my nearly four-year-old son will eat.



Creamy Butternut Squash Soup

3c chunked butternut squash
3c vegetable stock
1 clove of garlic, halved
1c soymilk
Pinch of ground ginger
Salt and pepper to taste

Simmer the squash and garlic in the stock for 10 minutes. Puree in a blender, food processor, or with a hand blender, and return to the pan. Add milk and ginger. Reheat, and season with salt and pepper to taste.

Easy Last-Minute Halloween Party Ideas

Happy Halloween! Cori of Peace, Baby! Batiks here. After Christmas, Halloween is probably my favorite holiday to decorate for and celebrate. We started our festivities on Sunday with a little party with our friends. (We wanted an extra night to show off my husband's crazy decorations and fog machine!) For a few weeks before the party, I kept my eyes open for cool, quick ideas (Thanks, Pinterest!). Here are a few of my favorites that I used over the weekend:

We'll also give bobbing for apples a shot and filled the house with the smell of mulled cider. And, everyone enjoyed the cool witches' brew punch. I love this time of year!

Recipe:: French Onion Soup

A great fall recipe for those cool nights courtesy of Niah Bella Boutique ...


Easy French Onion Soup


several thick slices of stale, or staled in the oven french bread
olive oil
red cooking wine
4-6 onions thinly sliced
one box each of chicken and beef stock, low sodium
two tablespoons of Italian blend seasonings
chopped garlic, or garlic salt
celery salt
sliced provolone cheese
oven safe soup ramekins or soup mugs....

In electric skillet with lid toss in the thinly sliced onions, or chop them if you prefer bite sized pieces, add some olive oil and slowly toss till caramelized, do not burn. Add in the dry seasonings and toss.
Poor the red cooking wine over the onions and let simmer for a min, long enough to open the two boxes of broth! Add both boxes of broth, and lower lid. Allow to simmer.

Once the soup has reduced down a bit you can ladle it into the oven safe mugs, leaving a half in or so at the top to accommodate the bread, place bread on top of soup and add provolone cheese, toast in oven till cheese is just melted, and serve.....

This smells so good, and can be made easily for company as everything can be done ahead and left to simmer till five minutes before serving when you place in the oven to toast... No one ever complains or goes home hungry when you serve comfort food, and this one can look so elegant!

Raising Money for Japan

Money allows humanitarian aid organizations to meet specific needs as they arise ... be they food, water, medical supplies, blankets, clothing, shelter, clean up ... rather than waiting for needed donations to come in.

Leaves are Falling

The kids were home from school today, thanks to parent teacher conferences, and the weather was amazing for mid-November in the midwest - Sunny and low 70s! We obviously spent the day outside. This morning we raked leaves, huge beautiful brown oak leaves that continued to fall all around us each time the wind blew. After an hour, half the yard was cleared of leaves and the kids had a huge pile of leaves perfect for jumping in.

While we raked, we collected little bits to make these wreaths tomorrow morning ... pine cones, acorns and acorn tops, seed pods. I'm on the look out for sweetgum seed pods, 'cause I'm confident a little collection would make an fantastic nature wreath, don't you?
